On today’s episode Kora makes a delicious, healthy, sugar free blackberry. Kora forages for blackberries in the local park. Kora makes her own pastry from scratch, if she can do it so can you, give it a try and remember the secret to pastry is keeping everything cold.
- 2 cups flour
- 200g butter
- 1 pinch salt
- 2-3 tablespoons chilled water
- 3-4 cups foraged blackberries
- 1/2 cup honey
- 1 tsp cinnamon
Preheat oven to 180ºC.
Rub chilled butter into flour until mixture resembles breadcrumbs.
Mix in salt and water.
Knead dough until just comes together.
Refrigerate for at least 30 minutes.
Roll out dough and line tin.
Blind back for 15 minutes and allow to cool while preparing filing.
Wash and drain blackberries.
Add honey and cinnamon.
Place filling into cooked base.
Bake for another 30 minutes.
